Louisiana Sweet Potatoes

When sweet potatoes appear at the Covington farmers market, I buy as many as I can. I purchase enough for my family, and extra to mail to my mother.  She's a big fan of Louisiana sweet potatoes, which are sweeter and moister when baked than other varieties. To ensure a crispy outer skin, make sure to dry the potatoes thoroughly.  For a moist and fluffy interior, bake at a high temperature.  

Wash and thoroughly dry the sweet potatoes.  Coat with olive oil and place on a baking sheet.  Sprinkle with salt and pepper and bake at 400 degrees F.  The baking time will depend on the size of the potatoes.

 They are cooked when the potatoes release caramelized juices, and a fork slides easily into the center.  Another method to testing for doneness is to gently squeeze the potato in the middle.  If the center gives easily, the potato is done. 

Serve warm or at room temperature.  Cool and store in the refrigerator.
