Palmiers

Palmiers are a buttery and crispy sweet French cookies that take very little effort to make.  Simply roll a sheet of defrosted puff pastry in cinnamon sugar, slice and bake. 
 

Preheat your oven to 400 degrees F.  In a small bowl, stir cinnamon and sugar together to make about 2 cups of cinnamon sugar.  Adjust the cinnamon to your taste.  I use quite a bit of cinnamon, and I prefer to grind cinnamon sticks in the blender for flavorful, fresh ground cinnamon.

Spread a heavy layer of cinnamon-sugar on a cutting board, or on your counter top.  Unfold a sheet of puff pastry and place on the cinnamon sugar.  Spread a generous layer of cinnamon sugar on top of the puff pastry sheet.  Start rolling in the short sides toward each other until they meet in the middle.  

Cut the rolled pastry into individual slices and place on a silicone or parchment lined baking sheet.  Sprinkle the top of each cut slice with cinnamon sugar.  Spread more cinnamon sugar on the countertop and repeat with the second sheet of puff pastry.  

 

 

Transfer to a cooling rack, and cool the cookies completely before storing or packaging for gift giving.
