Crock Pot Roast

It's a great day to pull out the crock pot for a slow cooker meal. Let's keep it simple with a chuck roast and the vegetables that you have on hand.  This dish is a great example of why I've created this No Recipe page.  Develop your cooking instincts, just as my grandmothers taught me, and learn to cook without a recipe.  Assess which ingredients you have available and go from there.  Tweak along the way if you have to and a delicious meal will be had by all.   I've gathered a few tips to make your slow cooker experience a delicious journey.

Pre-heat your crock pot while you're prepping your ingredients. A pre-heated slow cooker will allow flavors to start heating and blending as soon as they hit the pot.   Make this dish your own depending on what you’ve got in the house. I arrange a quartered onion, a few peeled carrots, and a couple of ribs of celery on the bottom. I prefer to generously season the entire roast with salt, oregano, red pepper, garlic onions and paprika, but you don't have to go on a scavenger hunt for all of these spices.  As I said, keep it simple and use Zatarain's Big and Zesty Garlic and Herb Creole Seasoning and all of those spices are in one beautifully blended bottle.

Generoulsly season both sides of the roast by rubbing with the Zatarain's seasoning. Set the seasoned roast on top of the vegetables.  I arranged more carrots, a couple more quartered onions and garlic cloves on top of the roast. (you can't have too many onions) Remember, use the vegetables that you have on hand... sweet potatoes, sliced corn on the cob, green onions, thick wedges of squash. Its all good!  I love the way the onions release juices and cook down or 'smother' as we say in the south. I also love that this is a set-it-and-forget-it kind of meal. As it all cooks on high for about 7 hours the roast and veggies will become tender and be surrounded by flavorful juices.  This is a perfect gravy to serve over a bed of rice. The leftovers make great roast and gravy sandwiches with a layer of Quick Pickles in there, too.
