Favorite Hummus

This truly is my family's favorite hummus because it is the base for a quick snack that can easily transform into many flavor profiles.  This is a recipe where you'll want to experiment with flavored oils.  Drizzle hummus with jalapeño oil and top with chopped tomatoes, cilantro and crumbled cotija cheese and serve with blue corn tortilla chips.  For a Greek inspired hummus drizzle with garlic flavored oil and top with diced cucumbers, red bell pepper, fresh dill, crumbled feta cheese, and serve with pita wedges.  

Favorite Hummus

Servings: Makes 2 1/2 cups

2 cloves garlic

1-1 1/2 teaspoons kosher salt

3 cups cooked chickpeas (rinsed and drained if using 2  15 oz. cans)

 2 Tablespoons lemon juice

 1 teaspoon ground cumin

 1/4 teaspoon red pepper flakes

 1/2 cup olive oil, extra for serving

1. In a food processor, pulse the garlic and salt until the garlic is finely chopped. 

2. Add the chickpeas, lemon juice, cumin and red pepper flakes and pulse to coarsely chop.  

3. Pour the olive oil into the bowl and process until the mixture is smooth and whipped, 2-4 minutes.  

4. Transfer to a bowl and drizzle with olive oil.  Serve with pita wedges, sliced carrots, endive leaves, or your favorite crudités.
